Strawberry meringue cupcakes

Hi everyone! Its Dora, I recently tried some lemon meringue cupcakes and I thought I would use Foodie Flavours to create my own recipe. So here is my recipe for strawberry meringue cupcakes!


For the cupcakes

Cupcake tray for 12 cupcakes
Bowl, spoon, electric mixer, piping bag and nozzle

Ingredients:
100 softened butter
150 self-raising flour
150 caster sugar
3 tablespoons milk
2 eggs
5 drops Foodie Flavours vanilla
15 drops Foodie Flavours strawberry
12 tsp strawberry jam

For the meringue:
3 medium egg whites (120g)
Pinch of cream of tartar
240g caster sugar
15 drops Foodie Flavours strawberry (pink food coloring optional)

Method

  1. Set the oven to 180/Gas 4.
  2. Add all the ingredients to the bowl except Foodie Flavours. Stir or use electric whisk until just combined.
  3. Then add 5 drops Foodie flavours vanilla and 15 drops Foodie Flavours strawberry and mix in.
  4. Half fill the cake cases and put in the oven for 10-15 mins
  5. Remove from the oven when golden and allow to cool.

For the meringues

3 medium egg whites (120g)
Pinch of cream of tartar
240g caster sugar
15 drops Foodie Flavours strawberry (pink food coloring optional)

Method for meringue topping

  • Turn the oven up to 220/Gas 7.
  • Whisk the egg whites and cream of tartar until foamy (electric whisk is useful here).
  • Add half the sugar and continue whisking until glossy and thick.
  • Add the rest of the sugar and 15 drops strawberry Foodie Flavours (pink coloring optional) then whisk for a few more seconds.
  • Pipe a ring of meringue around the outside of the cupcake
  • Place a tsp of strawberry jam into the centre of the cupcake then top with a second rosette of meringue (if you wish sprinkle with granulated sugar on top)
  • Place back in cake tin and put in the oven for a couple mins to brown.
  • Remove from oven and dust with icing sugar.
