It is best to avoid ethanol based flavours when making cheese. Oil based flavours as well as PG and Triacetin based flavours are ideal for flavouring cheese.
How much flavouring to use
Foodie Flavours are highly concentrated with an addition rate of 0.1-0.3%. The amount you use will differ depending on flavour and vary according to your recipe. As a guide, use between 1ml and 3ml per kg of cheese and adjust to taste. Some flavours may have a maximum limit which will be indicated on the label.
