150g digestive biscuits
1 oz unsalted butter
200g cream cheese
4tbsp icing sugar
150ml light double cream
200g cherries halved and to decorate
1. Mix the digestive crumbs with the butter until combined. Divide between the glasses and press down lightly.
2. Beat the cream cheese with the icing sugar, cream until thick, then set aside. Divide the cherries between the glasses. Top each with the cream cheese mixture and decorate with the remaining cherries. Chill for 30 minutes before serving.
